Abstract

Six samples of honey were collected from different regions of Egypt during the seasons of the year 2021 according to floral sources: citrus, clover,and citrus honey. Citrus honey is made by honey bee workers from the nectar of the blooms of various citrus trees from the beginning of spring to the conclusion of the flowering period of citrus species. Citrus honey samples were collected in April, and clover honey samples were obtained in June. (1st season of yield). During the months of May and June, when clover is in bloom, honey bee workers generate clover honey. (2nd season). First: The study aimed to determine the physical and chemical properties, and to detect the content of enzymes in honey the content of hydroxymethylfurfural, and the amino acid proline, which is considered one of the important quality elements in honey. The content of phytochemical compounds and color properties were also estimated. Heavy metals were also detected in honey in six samples of citrus honey and clover honey from different regions of Egypt. Second: The research also aimed to study the chemical properties of royal jelly in four samples, as follows: * Sample 1: Fresh royal jelly. * Sample 2: Chinese -imported royal jelly. * Sample 3: Commercial royal jelly from a commercial store in Tanta. * Sample 4: Commercial royal jelly from a commercial store in El- Mahalla El-Kubra.
