Dietary fiber were the topic of many arguments due to their great importance. However, vegetables and fruits are considered the most common dietary fiber. Three dried vegetables (grape leaves, celery and spinach) as a good source for natural dietary fiber, minerals and vitamins have been studied. The evaluation of three dried vegetables starts with normal animals moves through obese animals and ended with hyperglycemic animals.
The protective effect of the three dried vegetables against obesity was significant during 11 weeks of experiment, which it was found that three dried vegetables affected significantly decreased the level of serum glucose, total cholesterol, triglycerides, LDL and VLDL-cholesterol, as it is affected significantly increased the level of HDL-cholesterol, while, feeding of hyperlipaemic diet was reversal that, which decreased HDL, and increased significantly in all the same parameters. In additions, the present studies revealed that there was an significantly increased effect on consumed food, while, there was an significantly decreased on body weight gain and the relative weight of kidney, liver, heart and spleen.
The protective role of the three dried vegetables against development hyperglycemia was significant during 4 weeks of experiment, which it was found that three dried vegetables affected significantly decreased the level of serum glucose total cholesterol, triglycerides, LDL and VLDL-cholesterol, as it is affected significantly increased the level of HDL-cholesterol, this significantly change in parameters happen with all groups depended and non-depended insulin, while, feeding of hyperlipaemic diet plus hyperglycemic with insulin significantly decreased HDL-cholesterol, and significantly increased in all the same parameters. In addition, hyperglycemic studies revealed that there was an significantly increased effect on consumed food, while, there was an significantly decreased on body weight gain in all groups non-depended insulin. Meanwhile, feeding of hyperlipaemic diet plus hyperglycemic depended insulin significantly increased on body weight gain.
