Abstract Organic acids is one of the most important microbial production which used in many industrials, i.e. food industries, pharmaceutical and chemical industries. Lactic acid is one of the most organic acids which considered one of the agro industries in Egypt. This study aimed to isolate six thermophilic strain which posses ability to produce lactic acid and identified as Bacillus. Bacillus sp.(6) gave the highest lactic acid production and compare their productivity with That the imported strains Lactobacillus lactis and Lactobacillus gasseri on different nutritional media, the work also included the study of the effect of different environmental conditions, i.e. optimum media which containing whey supplemented with wheat bran or soybean flour, optimum pH 6.5and optimum temperature 35?C. The immobilization and the coimmobilization technique was used to improve the lactic acid production, the results showed that the coimmobilization by Caalginate gave the pest results of lactic acid production on soybean flour and wheat bran, the highest lactic acid production reached at about 80.56 g/l. free cells are more thermostable than immobilized and coimmobilized cells and immobilized and coimmobilized cells are more pH stable than free cells. |
