Abstract ABSTRACT A total of 100 random samples of beef luncheon, frozen beef kofta, chicken luncheon and raw chicken pane (25 of each) were collected from different localities in Gharbia governorate. These products subjected to bacteriological examination as Aerobic Plate Count, coliform count, S.aureus count and isolation and identification of Salmonella, E.Coli and Listeria. Frozen beef kofta samples showed relatively higher mean values of APC, coliform count and S.aureus count as 3.08×105± 0.21×105; 1.57×103± 0.15×103 and 2.82×103± 0.39×103 CFU/g , respectively than other products. Meanwhile, the enterotoxins secreted by S.aureus were enterotoxin B and enterotoxin (A&D), enterotoxin A, enterotoxin D and enterotoxin (A&C). Regarding to Salmonella, E.coli and Listeria were detected with a percentage of 16%, 20% and 20% in beef luncheon, 24 %, 36% and 16% in frozen beef kofta samples, 12% , 12% and 8% in chicken luncheon samples and 16%, 24% and 8% in raw chicken pane samples, respectively. The acceptability of the examined samples according to the permissible limits stipulated by ES (2005) were discussed.
