Abstract Obesity is the accumulation of excessive or abnormal fat that is dangerous to health. Studies confirm that obesity is a complex chronic medical condition due to the interaction of multiple genetic, environmental and behavioral factors. Over the past decades the prevalence of obesity has increased markedly and the epidemic rates have reached more than a third adults with overweight (BMI 25-29.9 kg / m2) or obese (body mass index ≥ 30 kg / m2) worldwide. The present study aimed to evaluate the effect of Fennel and Sage extract on the body weight, food intake, lipid profile, glucose and liver function. This research included two parts: The first part dealt with preparing food products from fennel and sage at 3% and 6%, a mixture of fennel and sage at 6%, then tested the sensory organic properties. The second part included a study of the effect of using fennel and sage as experimental agents at different concentrations on the rate of weight loss for obese rats. Fennel and sage extracts evaluated at different ratios (3%, 6% and 6% mixture of them). Thirty-five adult male albino rats were divided into two main groups, the first main group (n=5 rats) was fed on basal diet and served as negative group, while the second main group (n=30 rats) was fed on high fat diet for three weeks to induce obesity then was divided into six subgroups, subgroups (1) was fed on high fat diet and served as the control positive group, subgroups (2, 3) were fed on high fat diet plus water extract of Fennel seeds at a concentration of 3% and 6%, respectively, subgroups (4, 5) were fed on high fat diet plus water extract of Sage leaves at a concentration of 3% and 6%, respectively, subgroup (6) was fed on high fat diet plus plant extract at a concentration of 6% consists of (3% Fennel seeds and 3% Sage leaves). 76 The experiment lasted for eight weeks, at the end of the experiment period, rats were dissected and serums obtained for chemical analyzes of blood lipids and glucose levels. The results showed that the weight of the rats, the levels of cholesterol, triglycerides, low density cholesterol (LDL) and glucose were significantly increased in the positive control groupcompared to the negative control group. Most of the results indicated that adding fennel seed extract, sage leaf extract and the mixture of them reversed most of these changes that occurred as a result of feeding rats a diet high in fat. Therefore, the study recommended that taking fennel seeds and sage leaves may be beneficial for patients suffering from obesity. The results obtained can be summarized in the following points 1- With regard to the study of sensory organic properties: The results of testing the organic sensory properties of cakes and biscuits showed that the 3% group of Fennel was the most receptive to the arbitrators, while the group of 6% of the mixture of Fennel and Sage was the least receptive. The results of the organic sensory properties test of rosti Potatoes and yoghurt showed that the control group was the most receptive to the arbitrators, followed by the 3% Fennel group, while the 6% mixture of fennel and Sage was the least receptive to the rosti Potatoes, and the 6% Sage group the least receptive to the yogurt. 2- Body weight in rats: The results showed that the 3% Fennel group is the most effective in reducing body weight, followed by the 6% Fennel group and 6% a mixture of Fennel and Sage. While at the level of 3% and 6% Sage, the weight decreased by a small percentage compared to the positive control group. |
