Abstract A total of hundred and fifty samples of raw milk, Kariesh cheese and Yoghurt (50 samples of each) were collected randomly from street vendors, dairy shops and supermarkets in Zagazig city, Sharkia governorate, Egypt. A survey was conducted to determine the hygienic quality of the examined samples and public health hazard by estimate the prevalence of streptococci in examined raw milk, kariesh cheese and yoghurt samples,Validate the identification of streptococci of dairy origin by traditional biochemical assays against both MALDI-TOF MS and 16S rRNA gene sequencing; as a standard diagnostic tool, phylogenetically analyze the discrimination of the isolates based on sequencing of 16S rRNA gene and determination of antibiotic sensetivity tests against all streptococcal isolates. The results revealed that 72, 64 and 54 % of examined raw milk, kariesh cheese and yoghurt samples, respectively, were contaminated by streptococci. The results revealed that 82, 66 and 34 % of examined raw milk, kariesh cheese and yoghurt samples, respectively, were contaminated by entretococci. |
