Abstract This study was conducted to evaluate the quality and safety of imported frozen mackerel fish into Egypt through the port of Damietta. The study was carried out on 325 samples of frozen whole, ungutted mackerel fish which imported from different sources (A, B, C, D, E, F and G) and collected upon arrival to Damietta port - New Damitta city - Egypt. Sensory, chemical and bacteriological analysis were conducted according to the official Egyptian standard specifications and related standards for quality and safety evaluation. The percent of rejected samples in sensory evaluation were (0.61%), (0.31%) of imported fish from source B and source D, respectively. The mean values of TVB-N, TMA, TBA, pH and Histamine were (23.01 ± 3.32mg/100g), (3.26 ± 0.77mg/100g.), (2.01 ± 0.48mg. Malonaldihyde/kg), (6.08 ± 0.35) and (0.11± 0.01mg/100g.) of frozen imported mackerel fish, respectively. The prevalence of rejected samples for TVB-N analysis were (0.61%), (0.31%) of imported fish from source B and D, respectively. The prevalence of rejected samples for TMA analysis were (0.31%) of imported fish from source B. The prevalence of rejected samples for pH analysis were (2.8%), (1.5%), (2.8%) of imported fish from source B, C and source D, respectively. While all examined imported mackerel fish were within accepted limits for TBA and Histamin analysis. The mean values of TAPC, coliforms and S. sureus were (4.1x104), (4.7x 10 ± 5.6) and (1.32 x 102 ± 33.68) CFU/ g, respectively. The prevalence of E.coli detection were (0.61%), (0.31%) and (0.92%) from source B, C and D, respectively. The prevalence of V. parahaemolyticus detection were (0.31%), (1.2%), (0.31%), (0.92%), (0.61%) and (0.31%) from source A, B, C, D, source E and F, respectively. Salmonella spp., L. monocytogenes, and Shigella spp. Couldn’t be isolated from imported mackerel fish samples. |
