Abstract This study was done for evaluation the milk adulteration in Assiut city, therefore, 150 milksamples were collected randomly (50 dairy shops milk samples, 50 street vendors milk samples and 50UHT milk samples). The samples were examined for physical and chemical examinations, for the presence of inhibitory substances, preservativesand also for the detection of commercial additives. For the dairy shops milk samples,86% of the examined sampleswas adulterated with addition of water, 38% of the examined milk samples was skimmed and 32% with both types of adulteration. All the examined dairy shops milk samples were free from formalin, hydrogen peroxide, salicylic acid, boric acid & borax and carbonates& bi-carbonates.Also, they were free from commercial additives as starch, maltodextrin, urea, sodium chloride, skimmed milk powder and detergents. 26% of the examined milk samples may be with inhibitory substances and preservatives other than the examined specific ones (formalin, hydrogen peroxide, salicylic acid, boric acid & borax and carbonates& bi-carbonates). For the street vendors milk samples, 80% of the examined samples with added water, 36% of the examined milk samples was skimmed and 24% with both types of adulteration.All the examined milk samples were free from formalin, hydrogen peroxide, salicylic acid, boric acid &borax and carbonates& bi-carbonates.Also, they were free from commercial additives as starch, maltodextrin, urea, sodium chloride, skimmed milk powder and detergents. 20% of the examined milk samples may be with inhibitory substances and preservatives other than the examined specific ones (formalin, hydrogen peroxide, salicylic acid, boric acid & borax and carbonates& bi-carbonates). For the UHT milk samples,all of the examined samples with added water, 4% of the examined milk samples was with skimmed and 4% the examined milk samples with both types of adulteration. All the examined milk samples were free from formalin, hydrogen peroxide, salicylic acid, boric acid & borax and carbonates& bi-carbonates.Also, they were free from commercial additives as starch, maltodextrin, urea and detergent, while4 and 16% of the examined milk samples was contained sodium chloride and skimmed milk powder, respectively.14% of the examined milk samples may be with inhibitory substances and preservatives other than the examined specific ones (formalin, hydrogen peroxide, salicylic acid, boric acid & borax and carbonates& bi-carbonates). |
