Abstract Iron is an essential element for many cellular activities. It is also considered as an important component of several biological compounds. Generally, anemia is the most common feature of iron deficiency, this motivated nutritionists to consider dietary iron fortification program as a good solvent to combat such a problem. Chronic iron overload may result from several conditions including genetic defects of iron uptake and storage such as hereditary hemochromatosis, metabolic alterations such as defective erythropoiesis, chronic liver disease and repeated red blood cells transfusion. Previous studies, illustrated that the mechanism by which iron can induce tissue damage occurs through its ability to initiate reactive oxygen species (ROS) production that can directly attack cellular membrane polyunsaturated fatty acids (PUFAs). Moreover, ROS can also activate production of cytokines and nitric oxide (NO) which can be involved in the inflammatory responses. |
