Abstract A grand total of one hundred and thirty five apparently sound samples of locally manufactured canned beef (60), which included two brands (brand A) (15) & (brand B) (45), imported corned beef (60), which included two brands (brand A) (15) & (brand B) (45) and imported canned luncheon beef (15) were collocated from some supermarkets of Kalyobia governorate. Samples were divided into two groups : I-Forty five samples of local canned beef (brand A) (15), imported corned beef (brand A) (15) and imported canned luncheon beef (15) were examined, without storage, bacteriologically, chemically and for heavy metals determination. II-Ninety samples of both local canned beef (brand B) (45) and imported corned beef (brand B) (45) were stored at room temperature and examined bacteriologically, chemically and for heavy metals determination at total periods of 6 months, 18 months and 27 months from the date of production. The public health importances of the microbial and chemical (nitrites, nitrates & heavy metals) hazards were discussed. Final conclusion and some important recommendations to produce safe canned meat products were also mentioned. |
