Abstract

The thesis consists of five chapters. The first chapter locates at from pages 2 to 4 and includes the introduction, Problem of the Study, Hypotheses of the Study the aim and the importance of the study. The second chapter locates at from pages 6 to 42 and includes the related review literature which contains: Scrap on Nutrition and food service operations, Nutrition concerns in purchasing. Basic principles of purchasing food, The purchasing process, Goals of a purchasing program, Standard purchase specifications, Security concerns during purchasing and staff training, Supplier selection, Visiting the supplier, Essentials for effective receiving food, The Receiving Area, Receiving staff, The Receiving process, Safety sanitation and security in food receiving, Close looks on product receiving, Storage and issuing food , Nutrition concerns in storing, Basic goals of food storage, The types of food storage areas, Storing staff and equipment, Food Production, Food preparations, Conserving nutrients during food preparation, Kitchen staff, Food cooking, Hazards from specific cooking methods, Food Holding, Service, The relationship between nutrition and food safety, Food poisoning, Food safety standard, Waste disposal.
The third chapter locates at from pages 43 to 48 and includes the materials and methods of the study. The research tools namely, questionnaire present to the mangers and guests of Nile cruisers. The population of the study is the three, four and five star Nile cruisers operating between Luxor and Aswan.
The fourth chapter locates at from pages 66 to 145 and contains the results and discussion which obtained from analysis the research tools. The results data showed that the nutrition methods and food cycle procedures in Nile cruisers are need to improvement especial in four and three stars hotels .These improvement should include the nutritional awareness of managers of Nile cruisers and all food cycle techniques and administrate tasks of food security in all food processing steps.
The last chapter locates at from pages 147 to 159 and includes summary and recommendations. The recommendation which reached to them contains recommendation for the Nile cruisers mangers.
The references of the study locate at from pages 153 to 165. The study contains 76 English references and 7 Arabic references. Also, the study contains three appendices. The questionnaire forms in Arabic.
The study is ended by Arabic summary consists of 12 pages; the study includes 21 tables and 30 figures.
