Abstract
Ninety samples of pain small dairies balady big factores and probiotics yoghuter 30 each were collcted rendomly from different localities in Cairo and Giza.The pH was measured and the samples were examined microbiologically for the occurrence of spoilage microoraganisms and isolation of some pathogenic microoraganisms.
