Abstract

Lipid oxidation is a major cause of decrease in the flavor and nutritive value of fat and oil products. Polyunsaturated fatty acids (PUFA) playing an important role in animal and human nutrition .It is high sensitive to oxidation because of their high degree of unsaturation, Gustone and Norris, 1983).
